Why whole pods.

The flavor is in the seeds. The seeds keep their oils because the pod keeps them. Once you grind cardamom, you're racing time.

At home

  • Crack to release: Press the pod with the flat of a knife. Smell what happens.

  • Steep, then strain: Whole pods in liquid release perfume slowly, and a 10-minute steep beats a heavy-handed grind.

  • Grind only what you use: A mortar + pestle, the moment before the dish needs it. The smell tells you it was worth it.

Three rituals, start anywhere

Cardamom coffee

Drop one cracked pod in the grinds before brewing. Add a pinch of cinnamon if you like it warmer.

Cardamom rice

Two pods in the pot while basmati cooks. Pull them out before serving. The whole bowl is perfumed.

Cardamom milk

Warm milk, two cracked pods, a teaspoon of honey. Steep five minutes. Drink slowly.
